Aldeanne Pamatigan Sheldon wrote to share a recipe from her late mother, who was known as "Mrs. P." around August Ahrens Elementary School in Waipahu, where she was cafeteria manager. This is for C.S. Norita, who remembers several school-days dishes that he'd like to re-create, including this one, Spanish green beans.
SPANISH GREEN BEANS
Brown hamburger in a little oil; add onion, garlic, celery and dry seasonings. Add tomato sauce or paste and an equal amount of water, followed by the beans. Simmer one-half hour. Make a paste of one tablespoon flour to one tablespoon water and drizzle and stir into the green bean mixture. Simmer another five minutes to thicken. Taste and correct seasonings. Makes 4-6 servings.
